La Chilindrina

This cocktail, featuring brightly speckled pink dragonfruit, is inspired by the Mexican TV character La Chilindrina from the iconic show Chavo del Ocho. Oyamel dedicates its Day of the Dead festival every year to a Mexican celebrity, and this year the honor goes to Roberto Gómez Bolaños, also known as El Chesperito. On Chavo del Ocho, La Chilindrina is an 8-year old girl with bright red hair and freckles - a perfect match for the speckled dragonfruit.
La Chilindrina
Makes 1 cocktail
2 slices pink dragonfruit
1 ounce Altos Reposado
3/4 ounce Cocchi Rosa
1/2 ounce Yellow Chartreuse
1/2 ounce Vedrenne Pamplemousse Liqueur
1/2 ounce lemon juice
In a shaker, take one slice of the dragonfruit and muddle it. Add ice to the shaker, then the rest of the ingredients. Shake the cocktail for 30 seconds, and strain into a ice-filled rocks glass. Garnish with the second slice of dragonfruit and serve.
