Zaytinya's Tsipouro Sour
Makes 1
1.5 ounces Tsipouro, like Katsaros*
.75 ounces simple syrup
.75 ounces fresh-squeezed lime juice
2 dashes orange blossom water
1 ounce Aquafaba**
3 dashes Angostura bitters
In a cocktail shaker, combine all ingredients except the bitters and shake vigorously for 30 seconds without ice. Add ice to the shaker and shake for another 30 seconds. Strain into a chilled coupe glass, and garnish with three dashes of Angostura bitters. Drag a toothpick through the bitters to make a design in the top of cocktail froth, if desired.
*Tsipouro is a traditional Greek brandy distilled from grapes. Look for it at specialty liquor stores.
**Aquafaba, the protein-rich soaking liquid from chickpeas, is a great egg replacement for creating a frothy head on a shaken cocktail. Just open a can of chickpeas and strain, keeping the liquid and setting aside the chickpeas for another use. Read more about aquafaba here.
