Mojito Push Pop

July 2013

Makes 4

7 ounces water
4 tbsp sugar
½ cup fresh mint leaves
4 oz freshly squeezed lime juice
¼ tsp salt
2 1/2 ounces white rum

In a saucepan, combine the water and sugar and bring to a boil, remove from heat and stir until all the sugar is combined and you have a simple syrup.

While the syrup cools, place the mint in a pitcher or mixing bowl, and muddle with a pestle, adding the lime juice and salt. Combine the syrup and the mint-lime juice and stir well.

Strain through a fine-mesh sieve into a pitcher with a lip, stir in the rum. Carefully pour about 3 ounces of liquid into each of four push pop molds. Cover with lids and freeze overnight. Keep in freezer until ready to serve.
