The Grass is Always Green Cocktail

The Grass is Always Green is China Poblano’s signature cocktail for this year's Chinese New Year Celebration Menu, available February 4-17. The cocktail is inspired by the botanical flavors of China and the legendary Baijiu, a Chinese grain liquor with notes of pineapple, guava, and star anise. Yuzu lime, shishito peppers, and the notes of pink peppercorn and lemongrass found in the Bombay Sapphire East gin will send you to the tropical island of Hainan.
Makes 1 cocktail
3/4 ounce Bombay Sapphire East
3/4 ounce Hong Kong Baijiu
3/4 ounce Giffard orgeat syrup
1/2 ounce yuzu juice
1/4 ounce Shishito Tincture (see below)
3-4 Szechuan peppercorns, for garnish
2" piece of lemongrass, for garnish
Combine all the ingredients in a shaker and shake vigorously with ice. Fine strain into a glass with a large ice cube. For garnish, freshly crack 3-4 Szechuan peppercorns on top of the ice cube, and slightly bruise the lemongrass to release aroma.
Shishito Tincture
4 shishito peppers, washed and deseeded
1/2 cup high-proof neutral grain spirit, like Everclear
Place the deseeded peppers in the Everclear for 24 hours, then strain into a glass container. The tincture should last for weeks and doesn't need to be refrigerated.
