Serve 4 ounces each of semi-soft goat cheese, such as Garrotxa; creamy sheep’s milk, such as Pascualete; a firm, buttery sheep’s milk cheese like Manchego; and a smoky, firm cow’s milk cheese, such as San Simon; on a platter with José Andrés Picos Camperos and caramelized pears and apricots.
