Get Your Passport to Peru at China Chilcano

From the ocean to the Andes, Lima to the leafy Amazonian rainforest, Peru is a land of great diversity and contrast. More than 60 percent of Peru is covered by the Amazonian rain forest, more than any other country. The Andes, partially located in Peru, are the world’s highest mountain range outside of Asia. And the country has 1,500 miles of coastline, ranging from desert to tropical savannah. Each region has its own climate, ecosystems, and life - and each has its own unique culinary specialties.

For four weeks, China Chilcano will create new dishes and drinks each week based off the culturally different regions from Peru.  The menu will feature dishes from the Pacific Coast and Sierra to the Amazon and Lima.

Head Chef Carlos Delgado will serve up dishes like Carapulcra, a sundried yellow potato stew with pork belly, peanuts, chocolate, and rice from the Pacific Coast; and Patarashca, a Red Snapper dish with cilantro, Aji charapa, and tomato from the Amazon. Come back each week to get your passport stamped and experience a new region of Peru.  And don’t forget to try the new weekly drink specials including the Chicha de Guindas from Lima, a sour cherry pisco cocktail with chicha de jora, a fermented corn drink; and the Royal Peach from the Andes, a peach pisco cocktail made with lucama, a fruit that grows in the Andean highlands.
