China Chilcano's Ceviche Festival

Now that the heart of summer has arrived, it's time for the 2nd annual Ceviche Festival at China Chilcano! Ceviche, the classic Peruvian dish of lightly cured fish, lime juice, and aromatics, is perfect for a hot summer day: it's cool, bright, and goes perfectly with a Pisco Sour.

China Chilcano's Head Chef Carlos Delgado grew up in Peru, and brings a taste of his country's culinary traditions to Washington, DC. According to Chef Carlos, every ceviche must have five ingredients, but beyond that creativity rules. He's developed some new and unique ceviches and tiraditos (ceviche's cousin) for the festival, which runs from July 9th through August 5th.

In addition to the variety of ceviches on China Chilcano's regular menu, the festival will feature some of Carlos's innovative takes on the tradition:

Ceviche Carretillero: Octopus, razor clams, conch, fish, rocoto leche de tigre, kaiso seaweed

Ceviche de Navajas: Razor clams, smoked aji leche de tigre, green mango, kiwicha

Tiradito de pato: Duck breast, Aji mirasol leche de tigre, huacatay, pearl onions
