Butterfly Tacos Y Tortas Opens

ThinkFoodLab, the R&D-driven space from José Andrés’ ThinkFoodGroup, is launching its newest concept, Butterfly Tacos Y Tortas. Butterfly's menu is inspired by Mexico City’s vibrant street food culture and Mexico’s rich regional diversity as a whole.

Drawing on the decade-long success of Oyamel, just up the street, Butterfly features an all-new menu of tortas (Mexican-style sandwiches), tacos, salads, snacks, desserts (including Paletas, Mexican ice pops) and a seasonally-driven selection of agua fresca flavors. Butterfly will also debut at Audi Field, the new home of DC's Major League Soccer team, D.C. United.

Menu highlights include:

Tacos

  • Cochinita pibíl con cebolla en escabeche: Yucatán-style barbecued pork with pickled red onion and cilantro
  • Chilorio de Res:Shredded beef in a smoky chile sauce, onion, radish, and cilantro
  • Hongos: Grilled king trumpet mushrooms with Maggi sauce, salsa serrano, and guacamole
  • Pollo a la Parilla con Aguacate: Grilled marinated chicken thigh and green onion with guacamole and salsa chipotle
  • Pancita: Seared pork belly with guacamole, salsa chipotle, and lime

Tortas:

  • Camarones a la parilla: Grilled shrimp with sautéed squash, red chile, and avocado
  • Pancita: Seared pork belly with guacamole, salsa chipotle, black beans, and lime
  • Milanesa de Pollo con Chipotle: Crispy fried chicken breast with black beans, cheese, avocado, and Mexican sour cream
  • Hongos: Grilled trumpet mushrooms with guacamole, Maggie sauce, and cheese

Salads:

  • Ensalada de Alex-César Cardini: The classic Caesar salad of romaine lettuce, anchovies, parmesan cheese, and croutons
  • Ensalada Verde: Lettuce, watercress, pumpkin seeds, jicama, cilantro, scallions, radish, queso fresco, and chile lime dressing

Otra Cosas:

  • Papas al mole: José Andrés' favorite potato fries in a mole Poblano sauce of almonds, chiles and a touch of chocolate, topped with Mexican cream and queso fresco
  • Frutas: A classic treat from the streets of Mexico. Cucumber, jicama, and pineapple with chile, salt, and lime
  • Chips and Salsa Chipotle, with or without Guacamole: House-made salsa of charred tomatoes, onions, and chipotle chiles served with tortilla chips

Postres:

  • Paletas: Strawberry-Lime; Chongo (sweet milk, Mexican cinnamon); Mexican Chocolate
  • Oaxacan Chocolate Cookie: Double chocolate cookie with canela and sea salt, from our friends at Dog Tag Bakery.
