America Eats Tavern Returns to DC

What is American food? Is it confined to the old diner classics - burgers, meatloaf, and roast turkey? Or is it much more than that, a confluence of international and regional influences,  indigenous and global ingredients, and unlimited creativity? These are the questions that Chef José is exploring as he opens the newest iteration of America Eats Tavern in the historic Georgetown neighborhood of Washington, DC, his ode to the history and regions of American cuisine.

José, a history buff and cookbook collector, has been studying the origins of American dishes for years. When he launched the original America Eats Tavern, a pop-up restaurant with the National Archives, the menu featured the ketchups (more than 8 kinds, including walnut, oyster, and blueberry), mac and cheese (made with vermicelli noodles), and Gaspacho (a recipe borrowed from an 1820s American cookbook called The Virginia Housewife) that he and his team had researched. The restaurant was open for a year, during which time guests could visit an exhibit at the National Archives titled "What's Cooking, Uncle Sam?" in conjunction with the history-trotting culinary experience. From there, José and his team brought the concept to the Ritz-Carlton Tysons Corner in McLean, VA, where Virginians were able to taste the cuisine of their ancestors.

And now, America Eats Tavern is back! The most recent iteration is a more casual, rustic experience in an historic building in Georgetown, as well as a summertime outpost called OVATIONS by America Eats at Wolf Trap National Park in Vienna, Virginia. The updated menu at the Georgetown location will bring back some old favorites, as well as introduce new dishes, including a section dedicated to exploring the history of a truly American creation - barbecue. Highlights include Brisket from Creekstone Farms, Kansas; Pulled Pork prepared with a simple dry rub and served with warm rye bread, pickles and house barbecue sauce; Ribs available by the half and full rack, and more. OVATIONS will be serving a prix-fixe menu of American classics, alongside wines, beers, and cocktails from Virginia and beyond.
