José and ThinkFoodGroup Launch ThinkFoodLab

A traditional grilled sandwich with jamón and manchego cheese, toasted to perfection; breaded chicken breast topped with piparra peppers, alioli, bravas sauce, and a sherry dressing; and a new take on the classic BLT, finished with a perfectly fried egg and sandwiched between crispy pan de cristal – these are only a few of the sandwiches you can order at José’s newest project, ThinkFoodLab. 

The test kitchen, which opened Tuesday, July 11th, is dedicated to experimentation and rotating fast casual culinary concepts. “Innovation and experimentation are core to what we do at ThinkFoodGroup. ThinkFoodLab will give us the opportunity to test fast-casual concepts with a direct line to our guests,” notes Joe Raffa, Executive Chef of ThinkFoodGroup.

The first concept is Pepe, José’s food truck that serves traditional Spanish sandwiches. “We’re looking forward to bringing an expanded menu of Pepe offerings to Penn Quarter for this first pop-up and then testing new and exciting fast-casual ideas at ThinkFoodLab,” according to Raffa. ThinkFoodLab is featuring items from Pepe's menu, as well as an expanded selection of salads, Pan de Cristal sandwiches (made with the light yet crispy traditional Spanish bread), grab-and-go sandwiches, and homemade soft serve.
