New Dining Concept Coming to SLS Hotel in Beverly Hills

SLS Hotel, a Luxury Collection Hotel in Beverly Hills, announced today that the team will be reconcepting SAAM at The Bazaar by José Andrés. Following the last service on Saturday, July 29, the restaurant is slated to reopen as Somni, a new concept by José and ThinkFoodGroup Culinary Director Aitor Zabala, along with the TFG creative team, ThinkFoodTank.

“Since opening in 2009, I have been so proud of what we have accomplished at SAAM. This restaurant is very special – the creation of an amazing team of people including Aitor,” said Andrés. “We constantly have new ideas we want to explore, and Somni will give Aitor and the ThinkFoodTank team a new platform to deliver an unbelievable dining experience,” continued Andrés.

“Somni is an evolution from our past, and we will now be in the right space to make our “somni” (dream) come true,” stated Zabala. “I am extremely happy with what we’ve built in the past couple years, and it is time to make the 2.0 version and set the bar even higher,” continued Zabala.

SAAM will celebrate its final weeks of service with a guest appearance from renowned Spanish chef Andoni Luis Aduriz of Mugaritz (Errenteria, Spain), considered one of the pioneers of the Spanish modernist cuisine movement. With two Michelin stars and consistently ranked Top 10 on The World's 50 Best Restaurants list, Mugaritz is one of the most sought-after dining experiences across the world, serving as a hub for culinary invention and evolution that spreads beyond the kitchen.

On Thursday, July 21 and Friday, July 22, fellow el Bulli alums, chefs Zabala and Aduriz will collaborate on an exclusive 18-course menu pairing the best of SAAM and Mugaritz, displaying innovative takes on the modern culinary experience rooted in the chefs’ Spanish heritage. The reservations-only tasting menu is priced at $250 per person with an option to include a specially curated Spanish wine pairing, priced $150 per person.
